The origin
The one people request.

This started as a winter variation. Fresh ginger root — always fresh, never dried — added in the final hours of the simmer to preserve its bright, sharp edge. Lemon zest for an unexpected citrus note. Fermented garlic to round it out.

People kept asking for it. So now we make it every few batches. It never lasts long.
